Rhubarb Crunch

Ingredients
- Filling:
- 4 C. rhubarb pieces (1/2 inch thick)
- 1 C. granulated sugar
- 2 Tbs. butter or margarine
- 2 Tbs. flour
- Topping:
- 1 C. granulated sugar
- 2 tsp. baking powder
- 1 large egg, beaten
- 1/4 C. rolled oats
- 1 C. sifted all purpose flour
- 1 tsp. salt
Directions
To make filling, mix ingredients and put into 8 inch square baking dish. Let stand while mixing the topping.
To make topping, mix all ingredients until crumbly. Spread over rhubarb mixture in pan. Bake at 350 degrees for 40 minutes.
Yield: 6 servings
