Rhubarb Dump Cake

Easy and fun, this recipe is for all the rhubarb fans! Don't let the fact that rhubarb is a vegetable scare you away.

Ingredients

  • 4 C. fresh rhubarb, to be cut
  • 1 C. granulated sugar
  • 1 sm. box sugar free strawberry Jello
  • 1 box white cake mix
  • 1 C. water
  • 1 stick butter, to be melted

Directions

Place fresh rhubarb in lightly sprayed (i.e. PAM) 9x13-inch baking pan. Sprinkle sugar over rhubarb. Sprinkle Jello over sugar. While still in the bag, mash up cake mix to reduce lumps, then spread over top of rhubarb/sugar/jello. Pour water over entire mix, and then pour melted butter over all. Bake for 55-60 minutes in a 350-degree oven. Serve warm with ice cream.

  • This was great! I cut the rhubarb into about 3/4" pieces, but I'm sure it would have been good if cut larger, too.

  • When I submitted this recipe, I don't believe I wrote"to be cut" next to te rhubarb. The stalks should be cut into 1-2 inch chunks before spreading in the 9 X 13 pan.
