Rhubarb Muffins

If you love rhubarb pie, try these brown sugar and nut muffins for a special treat.

Ingredients

  • 1 1/2 C. brown sugar
  • 2/3 C. oil
  • 1 egg
  • 1 C. buttermilk
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 21/2 C. flour
  • 11/2 C. diced rhubarb
  • 1/2 C. chopped nuts
  • Topping (below)

Directions

Fill paper-lined muffin tins to 2/3 full or pour batter into 9x13 cake pan. Sprinkle with topping. Bake at 400 degrees for 20 to 25 minutes.

Makes 24.

Muffins Topping

Ingredients

1/2 C chopped nuts

1/3 C. sugar

11/2 tsp. flour

1 Tbs. melted butter

Directions

Mix together and sprinkle over unbaked muffins.
