Rhubarb Muffins
Ingredients
- 1 1/2 C. brown sugar
- 2/3 C. oil
- 1 egg
- 1 C. buttermilk
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. vanilla
- 21/2 C. flour
- 11/2 C. diced rhubarb
- 1/2 C. chopped nuts
- Topping (below)
Directions
Fill paper-lined muffin tins to 2/3 full or pour batter into 9x13 cake pan. Sprinkle with topping. Bake at 400 degrees for 20 to 25 minutes.
Makes 24.
Muffins Topping
Ingredients
1/2 C chopped nuts
1/3 C. sugar
11/2 tsp. flour
1 Tbs. melted butter
Directions
Mix together and sprinkle over unbaked muffins.
