Rhubarb Muffins

The unique flavor of rhubarb gives these muffins fantastic flavor and the sugary topping really makes them special.

Ingredients

  • 1 1/2 C. brown sugar
  • 2/3 C. oil
  • 1 egg
  • 1 C. buttermilk
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 2 1/2 C. flour
  • 1 1/2 C. diced rhubarb
  • 1/2 C. chopped nuts
  • Topping:
  • 1/2 C. chopped nuts
  • 1/3 C. sugar
  • 1 1/2 tsp. flour
  • 1 Tbs. melted butter

Directions

Fill 2/3 full, paper-lined muffin tins or pour batter into 9x13 cake pan. Sprinkle with topping. Bake at 400 degrees for 20- 25 minutes.

To make topping, mix together; sprinkle over unbaked muffins.

Yield: 24 muffins
