Rhubarb Muffins

Ingredients
- 1 1/2 C. brown sugar
- 2/3 C. oil
- 1 egg
- 1 C. buttermilk
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. vanilla
- 2 1/2 C. flour
- 1 1/2 C. diced rhubarb
- 1/2 C. chopped nuts
- Topping:
- 1/2 C. chopped nuts
- 1/3 C. sugar
- 1 1/2 tsp. flour
- 1 Tbs. melted butter
Directions
Fill 2/3 full, paper-lined muffin tins or pour batter into 9x13 cake pan. Sprinkle with topping. Bake at 400 degrees for 20- 25 minutes.
To make topping, mix together; sprinkle over unbaked muffins.
Yield: 24 muffins
