This is a very good recipe for rhubarb and non-rhubarb lovers alike!

Ingredients

  • 5 C. rhubarb, cleaned and cut like celery
  • 3 1/2 C. mini marshmallows
  • 1 C. sugar
  • 2 boxes strawberry Jell-O
  • 1 box yellow cake mix

Directions

Mix rhubarb, sugar, marshmallows and strawberry Jell-O mix together in a bowl and pour in bottom of large cake pan. Make yellow cake mix batter according to box directions. Pour all of first mixture bottom of pan. Pour cake mix on top. Bake at 350 degrees for 1 hour.
