Rice, vegetables, yogurt, mayonnaise and fruit all make for the perfect summer salad.

Ingredients

  • 4 scallions, chopped
  • 1/4 C. peas, cooked
  • 1/4 C. green beans, cooked and chopped
  • 1/4 C. carrots, cooked and diced
  • 1/4 C. corn
  • 3 C. cooked long grain rice
  • juice and grated rind 1 lemon
  • 1/4 C. mayonnaise
  • 2 Tbs. yogurt
  • 2 pears, peeled and cut into sections
  • 4 black olives

Directions

Place the vegetables and rice in a bowl. Mix the lemon juice and rind with the mayonnaise and yogurt, and pour over the vegetables. Arrange the pear sections over the edge of the bowl and decorate with the olives.
