- 2 C. cold cooked rice
- 2 C. whipped cream
- 1 C. pineapple, finely chopped (may substitute with apricot)
- Optional Garnish:
Mix pineapple and rice with whipped cream. Chill. Serve in sherbet glasses, garnished with cherries or strawberries. Apricots may be substituted for the pineapple.
