Ingredients

  • 1/2 C. rice cooked in boiling water for 10 minutes
  • 1/4 C. sugar
  • 1 1/2 C. hot milk
  • 6 oz. sweet chocolate
  • 3 Tbs. butter
  • 1 vanilla bean
  • 4 egg yolks
  • 1/2 C. sugar
  • 1 C. light cream

Directions

Dissolve chocolate in milk and combine with remaining ingredients.  Cook in a covered heavy saucepan or a covered casserole in the oven at 350 degrees for about 45 minutes or until the rice has absorbed all the milk.  Beat together egg yolks and sugar.  Bring cream almost to a boil and add to egg yolks and sugar.  Return to heavy saucepan.  Cook over low heat until custard thickens.  Combine with rice.  Pour into a shallow dish and serve cold.
