Rice Pudding with Pineapple

This rice pudding has a fruity twist!

4-6 servings


  • 3/4 C. brown rice
  • 3/4 C. whole milk
  • 1/2 C. raisins
  • 1/4 C. maple syrup
  • 1 C. crushed pineapple, drained
  • 1 tsp. vanilla extract
  • 1/4 tsp. ground cinnamon
  • 1/16 tsp. ground nutmeg

Combine rice with 2 1/2 cups of water in a saucepan.  Bring to a simmer, then cover and simmer gently until water is absorbed.  This should take about 30 minutes.  When absorbed, stir in milk and simmer until milk is absorbed.

Remove from heat and allow to cool for 5 minutes.  Stir in remaining ingredients.

Divide rice pudding among 4 to 6 dishes, sprinkle with extra cinnamon, and serve warm.
