  • 8 C water
  • 1 C rice
  • 4 C mixed mushrooms
  • 1 small onion, chopped
  • 1⁄4 C olive oil
  • 1 tsp salt
  • 1⁄4 tsp black pepper
  • 1⁄4 C fresh parsley, chopped
  • 1⁄4 C fresh chives, chopped
  • 1/2 C fresh peas
  • 4 peeled and deveined shrimp

Boil rice gently in pot with water for 30 to 40 minutes until tender.
Drain rice and place in side dish.
Stir together mushrooms, shrimp, onions oil, peas, vinegar, salt and pepper in saucepan. Bring to a boil, then reduce heat to medium. Simmer until mushrooms and shrimp are tender, for about 5 minutes.
Ladle rice on top of veggie mixture. Let cool.
