  • 3/4 C. sugar
  • 1 C. milk
  • 1/4 tsp. salt
  • 2 Tbs. cocoa powder
  • 3 egg yolk, lightly beaten
  • 2 oz. semisweet chocolate, chopped
  • 2 C. heavy cream
  • 1 tsp. vanilla extract

In a saucepan over medium heat, combine sugar, milk, salt, and cocoa powder, stirring constantly. Bring it to a simmer. Place the egg yolks in a small bowl and gradually stir in about 1/2 C. hot liquid and return it to the saucepan. Heat until it thickens, but do not boil. Remove from heat and stir in the chopped chocolate until completely melted. Pour into a chilled bowl and refrigerate for at least 2 hours, stirring occasionally. When it is completely cooled, stir in the cream and vanilla. Pour into an ice cream maker and freeze according to manufacturing directions.
