  • 2 (28 oz.) cans diced tomatoes
  • 2 T. vegetable oil
  • 2 onions, diced
  • 6-8 cloves garlic, minced
  • ¼ C. chili powder
  • 2 T. cumin
  • Salt and pepper to taste
  • 2 (15 oz.) cans pinto beans, rinsed and drained
  • 2 (15 oz.) cans chipotle chiles in adobe sauce
  • 4 tsp. sugar
  • 2 C. corn
  • Cilantro to taste

In a large skillet, heat oil and sauté onions and garlic with chili powder, cumin, salt, and pepper until softened. Blend diced tomatoes and pour into skillet. Stir well, remove from heat, and transfer into your crockpot. Add in beans, chipotles, and sugar; stir well and cook on low for 6 to 8 hours. Stir in corn and cilantro and serve.
