Ingredients

  • 1 lb. Brussels sprouts, halved
  • 2 lg. celery ribs, sliced
  • 2 sm. shallots, sliced
  • 3 sm. red peppers, sliced thinly
  • 1 med. leek, sliced
  • salt and pepper, to taste
  • 2 1/2 C. vegetable broth
  • 1/2 C. heavy cream
  • 1 Tbs. flour
  • 1 sliced orange
  • 1 sliced lime
  • 1 sliced lemon

Directions

Place all ingredients except the flour into the crockpot and cook for at least 8 hours. After 8 hours, mix the flour with 1/2 tablespoon of hot water to form a slurry. Add to the soup, stir, and wait 20 minutes. After 20 minutes, serve. Garnish with fresh herbs and the citrus slices.
