Ingredients
- 1/2 C. margarine
- 2 lb. hash brown potatoes, frozen
- 2 C. sour cream
- 1/2 C. onion, chopped
- 1/2 C. green pepper, chopped
- 1/2 C. red pepper, chopped
- 2 C. shredded Mozzarella cheese
- 1 can cream of mushroom soup
- 1 tsp. salt
- 1/2 tsp. pepper

Directions
Preheat oven to 350 degrees. Melt margarine and add to frozen potatoes. Mix the remaining ingredients in a separate bowl. Combine mixture with potatoes in a 13 x 9 x 2 baking pan. Bake uncovered for 1 hour. Top with more shredded cheese if you desire when it's done.
