  • 1 ½ C. sugar
  • 1 ¼ C. all-purpose flower
  • ¾ C. cocoa powder
  • 2 tsp. baking powder
  • 1 ½ tsp. baking soda
  • ⅛ tsp. Salt
  • 1 C. buttermilk
  • 3 large eggs
  • 2 tsp. almond extract
  • 6 Tbs. unsalted butter, softened
  • 1 C. water
  • 1 C. walnuts, crushed
  • 1 container chocolate frosting
  • Walnuts to garnish

Preheat oven to 325 degrees. Line three 8-inch round cake pans with parchment paper and spray with cooking spray. In a large bowl, whisk together sugar, flour, cocoa powder, baking powder, baking soda and salt. In a small mixing bowl whisk together buttermilk, eggs and almond extract. In a different small bowl, melt the butter in the water.

Using a handheld or countertop mixer, beat on low speed, half the buttermilk mixture into the dry ingredients. Beat in half of the egg and water mixture. Repeat with both mixtures until batter is well blended. Fold in crushed walnuts.

Evenly distribute batter into three pans. Bake for 25-30 minutes, turning halfway. Once done, test with a toothpick. If it comes out clean, the cakes are ready. Remove from oven and allow to cool for 10 minutes. Remove from pans and let cool on a wire rack. Frost the tops of each cake. Stack them on top of one another. Use remaining frosting to frost the sides. Garnish with walnuts and serve.
