  • 2 C. cranberries
  • ½ C. all-purpose flour
  • Salt and pepper to taste
  • 3 lb. beef stew meat
  • 3 T. butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 C. beef broth
  • 1 C. red wine
  • 1 T. sugar
  • 1 tsp. thyme
  • 6 carrots, chopped
  • 2 stalks celery, chopped
  • 2 potatoes, peeled and chopped
  • ¼ C. fresh parsley, chopped

In a bowl, combine flour, salt, and pepper. Toss meat in flour mixture and transfer to a large pot. Brown meat and sauté onion and garlic until beef is cooked through. Add in cranberries, beef broth, wine, sugar, thyme, salt, and pepper. Bring to a boil, reduce heat, and simmer on low (covered) for an hour. Add in carrots, potatoes, and celery, cover, and continue to simmer for an additional 30 minutes until vegetables are tender.
