Ingredients

  • 4 oz. bacon, chopped
  • 2 C. leeks, chopped
  • 1 C. celery, chopped
  • 3 C. potatoes, peeled and chopped
  • 2 C. chicken broth
  • 2 C. water
  • Salt and pepper to taste
  • 1 sprig thyme
  • 1 T. butter
  • 1 lb. salmon fillets, cut into pieces
  • ½ C. corn
  • 2 T. flour
  • ¾ C. heavy cream
  • 2 T. lemon juice
  • 1 tsp. lemon zest

In a large pot, cook bacon until browned. Add in leeks and celery; sauté until tender. Add in potatoes, broth, water, salt, pepper, and thyme. Stir well and simmer for 15 minutes until potatoes are tender. Meanwhile, toss salmon pieces in flour, season with salt and pepper, and cook in a skillet with butter until flaky. Add salmon to the pot, stir in corn, and heat for 5 more minutes. Stir in cream, lemon juice, and lemon zest. Serve as is or use an immersion blender for a creamy consistency.
