Ingredients
- ¼ C. granulated sugar
- 8 oz. cream cheese
- 1 C. powdered sugar
- 1 C. heavy cream
- 1 tsp. Vanilla
- 1 ¼ C. graham crackers, crushed
- ¼ C. unsalted butter, softened
- 1 pint strawberries, chopped
- ½ C. sugar
- 1 tsp. lemon juice

In a standing mixer, blend the sugars, cream cheese, heavy cream, and vanilla. In a saucepan, combine the strawberries, sugar, and lemon juice and bring the mixture to a boil. Smash the strawberries and continue stirring for 10 minutes until everything is combined and strain the juice. Let the mixture cool. Combine the crackers and butter and press the crust into the bottom of the jars. Divide the cheesecake mixture into the jars and refrigerate the mixture for 3 hours. Pour the strawberry puree on top and refrigerate for an additional half hour. Serve immediately.
