Rich Tiramisu

Ingredients
- 1 4-oz. pkg. dry ladyfingers
- 1/2 C. brewed espresso coffee, cooled
- 2 Tbs. brandy
- 6 eggs, separated
- 6 Tbs. sugar
- 2 lbs. mascarpone cheese
- 1/2 C. heavy cream
- 1/4 C. sour cream
- 4 Tbs. unsweetened cocoa powder
Directions
Combine cheese and two creams in a bowl. Set aside. Spread ladyfingers on a large, baking sheet. In a small bowl, combine coffee and brandy. Sprinkle ladyfingers with mixture and set aside. In a medium bowl, beat egg yolks and sugar with an electric mixer until thick and lemon colored, 4-5 minutes. Add mascarpone mixture and blend on low speed until combined.
In a large bowl, beat egg whites with electric mixer until soft peaks form. Should take 2-3 minutes. Using a rubber spatula, fold egg whites into mascarpone mixture. Line the bottom of an 8-cup souffle dish with half the ladyfingers and sift 2 Tbs. of cocoa over the surface. Repeat layers, ending with the cocoa. Cover with the plastic wrap an refrigerate at least 2 hours.
