Ricotta Cheese Pie
Ingredients
- Crust:
- 3/4 C. flour
- 3 Tbs. sugar
- 6 Tbs. butter
- 1 egg yolk
- 1/4 tsp. vanilla
- Filling:
- 3 C. ricotta cheese
- 3 egg yolks
- 1/2 C. plus 2 Tbs. sugar
- Zest of one lemon
- 3 eggs
Directions
Crust: Combine flour and sugar. Mix in butter until crumbly. Stir in egg yolk and vanilla. Knead dough slightly to form a ball. Roll dough out to fit into a 10" round pie pan. Bake in 400 degree oven for about 7 minutes or until golden brown. Let cool before filling.
Filling: Combine all ingredients. Stir together by hand. Pour into baked pie shell and smooth the top. Bake at 350 degrees for 30-40 minutes or until knife inserted off center comes out clean.
