  • 1 box penne pasta
  • 1 teaspoon olive oil
  • ½ onion, diced
  • 1lb fresh spinach, chopped
  • ½ teaspoon fresh thyme, chopped
  • 6oz ricotta cheese
  • 1 tomato, diced
  • ½ teaspoon ground nutmeg
  • salt
  • pepper
  • 1 teaspoon vegetable stock
  • 2 cloves garlic, minced

Cook the pasta according to the box, drain and set aside. Heat the oil in a skillet and cook the onion until tender. Add the thyme, garlic and spinach and cook for 3 more minutes until the spinach wilts. Add the ricotta cheese and cook until the sauce is smooth. Season with nutmeg, salt, pepper and vegetable stock. Add the tomato and cook for and additional 2 minutes. Serve over pasta.
