River Rice Pudding

This creamy rice pudding has raisins for extra plump and flavor.

Ingredients

  • Water to cover
  • 1 tsp. salt
  • Small amount butter or margarine
  • 1 1/2 C. sugar
  • 1 qt. milk
  • 1 tsp. vanilla extract or lemon juice
  • Raisins
  • Cinnamon
  • 6 Eggs

Directions

In a large pan add the rice, salt, water to cover, butter cook until water is absorbed and rice is slightly cooked. Next, add the milk and sugar until the rice is cooked. When this is done, add vanilla and set aside for moment. Beat the eggs well and temper it to the rice. Add all the mixture quickly so not to curdle the eggs. You can add raisins at this point or when you add milk to rice. Pour into desert dishes or onto a platter shake cinnamon on top an enjoy good either hot or cold.
