Roast on a Budget

Easily made, inexpensive and feeds the family twice. Servings depends on size of roast.

  • 2-3 lb. roast (beef, pork, or wild game)
  • 2 pkg. brown gravy mix
  • 1 pkg. beef stew mix
  • 1 Tbs. minced garlic w/juice
  • 2 carrots, sliced or diced
  • 1-2 green bell peppers
  • 1/2 onion
  • 3 green onions
  • 6-7 small red potatoes, whole or quartered or 2 cubed russets
  • Salt and pepper to taste
  • 1 tsp. Tony Chachere's Creole Seasoning
  • Water

Throw all ingredients in the crockpot or pressure cooker. Add water until it covers the roast. Cook down until tender, adding water as necessary. Serve over rice or mashed potatoes. Store leftovers in fridge for up to one week. Change, add or adjust seasonings to taste.
