Roasted Balsamic Sweet Potatoes

- 4 lb. sweet potatoes, unpeeled and chopped
- 1 C. onion, sliced thin
- 2 Tbs. olive oil
- Balsamic Vinaigrette:
- 1/4 c. oil
- 2 Tbs. balsamic vinegar
- 1/2 tsp. salt
- 1/4 tsp. pepper
To make the balsamic vinaigrette, mix all the ingredients together in a jar with a lid and shake well to combine.
Preheat the oven to 450 degrees. Grease a large roasting pan and put the chopped sweet potatoes into it. Add in the sliced onions and drizzle with the oil. Toss to coat. Roast for 35 to 40 minutes, or until the potatoes are tender and lightly browned.
Transfer them to a serving dish and drizzle with the balsamic vinaigrette. Serve immediately.
