  • 1 butternut squash, peeled and cubed
  • 2 T. olive oil
  • ¼ red onion, chopped
  • ¼ C. basil
  • ½ C. feta cheese, cubed
  • 1 garlic clove, minced
  • 1 can of chickpeas, drained
  • Salt
  • Pepper

Preheat oven to 425 degrees. Mix the prepared squash, olive oil, minced garlic clove. Salt and pepper to taste. Transfer mixture into a baking pan. Bake for 25 minutes. Meanwhile, combine the remaining ingredients into a large bowl. Remove baking pan from oven. Combine both mixtures. Serve with a light dressing. Enjoy!
