Roasted Cannellini Bean Salad with Tomato and Mint

- 1 can cannellini beans, cooked and drained (2 cans for larger serving)
- 1-2 tomatoes, sliced finely
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 oz fresh mint
Preheat oven to 350 degrees F. In a small casserole dish, add in drained cannellini beans. Add in lemon juice and olive oil on top. Cook for 15 minutes, do not burn. After the casserole is out of the oven, add in fresh tomatoes and sprinkle with fresh mint.
