  • 1 lb. carrots, peeled and thinly sliced
  • 2 medium onions, thinly sliced
  • 1/2 lb. potatoes, cut into 1/4" slices
  • 2 Tbs. Italian dressing
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbs. Balsamic vinegar

Preheat oven to 375 degrees F. Boil potatoes in large saucepan of water for 25 to 30 minutes. Spray baking pan with nonstick cooking spray. In a large bowl, toss all ingredients together, including boiled potatoes. Spread mixture on prepared pan. Roast for 25 to 30 minutes, tossing after 15 minutes, until nicely browned.
