A little bit of olive oil goes a long way for cauliflower.

Ingredients

  • 1 med. cauliflower
  • 1/4 C. olive oil
  • salt
  • pepper

Directions

Cut the cauliflower into 2-inch florets. Trim off the ends of the stems. Cut thick stems crosswise into 1/4-inch slices. Preheat the oven to 350 degrees. Spread the cauliflower in a large roasting pan. Toss with the oil and a sprinkle of salt and pepper. Bake, stirring occasionally, for 45 minutes or until cauliflower is tender and lightly browned. Serve.
