Roasted Cauliflower Parmesan

Ingredients
- cooking spray
- 1/2 Tbs. olive oil
- 1/2 Tbs. lemon juice
- 1/8 tsp. salt, optional
- freshly ground pepper to taste
- 1/2 head cauliflower, broken into florets
- 1/2 Tbs. fine fresh bread crumbs
- 1 Tbs. grated Parmesan cheese
Directions
Preheat oven to 475 F. Lightly coat a shallow nonstick baking pan with cooking spray.
In a large bowl, whisk together the olive oil, lemon juice, salt and pepper. Add cauliflower florets and lightly toss to coat evenly. Transfer the cauliflower to the baking pan and drizzle with any olive oil mixture left in bowl. Roast for 12 to 15 minutes, until browned and just tender. Turn the florets once while roasting.
Meanwhile, lightly toast the bread crumbs in a toaster oven (or 275 F. oven). Combine with the cheese. When the cauliflower is done, top with bread crumb mixture. Serve hot or at room temperature.
