This is the perfect dinner dish to make as the season starts to change from summer to fall. Next to pumpkin, squash is a famous fall food and the squash goes wonderfully with potatoes and roasted chicken.

  • 2 tablespoons minced garlic
  • 1 ½ cups cubed and peeled butternut squash
  • 12 ounces red potatoes
  • 1 pound boneless skinless chicken thighs
  • 2 tablespoons butter
  • ½ teaspoon dried sage
  • 3 sprigs thyme
  • Salt and pepper

Preheat the oven to 400 degrees F. Mix 1 ½ tablespoons garlic with sage and season with ½ teaspoon of salt and pepper each. Rub this mixture over the chicken. Coat a broiler pan with cooking spray and put the chicken on the pan. Cut the potatoes into wedges and mix with the squash, butter, and garlic. Season with salt and pepper. Place this mixture around the chicken and bake for 1 hour. Garnish with thyme.
