Ingredients

  • 4 Cornish hens
  • 6 Tbs. unsalted butter
  • 1/4 C. onion, chopped
  • 1/4 C. celery, chopped
  • 1 C. fingerling potatoes, to serve
  • 1 tsp. salt

Stir in mushrooms to melted butter. Then slowly add the onions and celery. After, stir in the rice along with the seasonings. Stuff the mixture into the cornish hens. Bake hens at 350 degrees for 30 minutes. In a separate pan, roast and seaon the fingerling potatoes. Serve potatoes beneath the hens.
