  • For the Figs:
  • 4 ripe black mission figs, quartered
  • 1/2 C. walnut halves
  • 1 C. pickled red onion slices
  • 5 oz. block of goat cheese
  • salt
  • black pepper
  • For the Nectarine Vinaigrette:
  • 1 nectarine, washed and sliced
  • 1/2 habanero pepper
  • 1/4 C. olive oil
  • 3 T. champagne vinegar
  • 1 tsp. grainy Dijon mustard
  • pinch salt

For dressing, puree the nectarine with the habanero in a small food processor, processing until fully pureed. Pour just 3 T. of the puree into a jar or small bowl and whisk in the rest of the ingredients. Take a taste and adjust seasoning if you like. Refrigerate until needed. Preheat oven to 350°F. Slice the goat cheese into small rounds. Scatter figs, walnuts, and onion over a baking sheet. Roast in oven for 10 minutes. Remove from oven and let cool. Combine with goat cheese. Season with salt and black pepper. Serve with the vinaigrette.
