Red potatoes are baked up to perfection with sweet onion, garlic, and rosemary.

  • 6 medium red potatoes, scrubbed
  • 1 large sweet onion, sliced thin
  • 4 cloves garlic, minced
  • 2 Tbsp. olive oil
  • 1 tsp. kosher salt
  • 1/2 tsp. rosemary

Preheat oven to 375°F (190°C). Spray a large baking sheet with cooking spray. Cut potatoes into 1-inch pieces and place in a large bowl. Add onion, garlic, olive oil and salt and mix well, to coat all the vegetables with oil. Place the mixture on baking sheet, spreading out so that the potatoes and onions are in one layer. Bake 1 hour, turning potatoes with a spatula after about 30 minutes. Sprinkle rosemary over the potatoes during the last 10 minutes of baking.
