  • 2 lbs. gold potatoes, cubed
  • 1/3 C. parmesan cheese, shredded
  • 1 carrot, chopped and cooked
  • 3 T. olive oil
  • 1 T. fresh herbs
  • 1 tsp. salt
  • 1 tsp. garlic powder

Preheat the oven to 375 degrees. Mix the cubed potatoes, parmesan cheese, prepared carrot, olive oil, fresh herbs, salt and pepper. Place the potato mixture into a greased baking pan. Bake for 20 minutes. Serve and enjoy.
