Roasted Halibut with Vegetables

Ingredients
- 1 red pepper, cut into 1-inch pieces
- 1 med. zucchini, cut into 1-inch pieces
- 1 med. eggplant, cut into 1-inch pieces
- 4 med potatoes, cut into 1-inch pieces
- 1 med. onion, cut into 1-inch pieces
- 1 bay leaf
- 1/4 C. + 1 Tbs. olive oil
- salt
- pepper
- 4 halibut steaks
- 1 Tbs. lemon juice
- 2 Tbs. chopped parsley
Directions
Preheat oven to 425 degrees. In a large baking pan, combine pepper, zucchini, eggplant, potatoes, onion and bay leaf. Sprinkle with 1/4 C. olive oil and salt and pepper. Toss. Bake vegetables for 40 minutes or until lightly browned. Put the fish on a plate and sprinkle them with the rest of the oil, lemon juice, parsley, salt and pepper to taste. Push vegetables to the edge of the pan and add fish. Bake for 8-10 minutes, then serve.
