Ingredients

  • 2 lb. lamb rib roasts
  • 1 C. lemon juice
  • 4 cloves garlic, chopped
  • 1/4 C. dry sherry
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • Mango Sauce:
  • 2 C. frozen mango pulp
  • 4 cloves garlic, chopped
  • 1/2 C. cider vinegar
  • 1/4 C. dry sherry
  • 2 Tbs. honey
  • 2 tsp. mustard
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Directions

Place lamb roast in zipped bag. Mix all ingredients except for those needed in the mango sauce. Leave in the fridge overnight. Remove lamb and discard marinade. Place lamb on a large roasting pan. Roast 30 minutes per pound. For mango sauce, blend ingredients in food processor. Remove roast when done and let it rest for a few minutes before slicing. Serve lamb with sauce.
