  • 2 Tbs. rosemary, chopped
  • 1 clove garlic, minced
  • 1 tsp. crushed red pepper
  • 2 lemons, cut into halves and juiced
  • Olive oil
  • 1 1/2 lb. chicken drumsticks (about 12-15)
  • 1 yellow onion, chopped
  • 1/2 lb. mushrooms, roughly chopped

Preheat your oven to 450 degrees F. In a large bowl, mix rosemary, garlic and peppers with lemon juice until they form a thick paste. Spread paste on chicken. Heat olive oil in a large skillet. Sear chicken over high heat for 2 to 3 minutes each side. Turn the heat to medium and cover. Cook for 3 to 4 minutes. Add onions, mushrooms and lemon halves. Bake in oven for 20 to 25 minutes or until chicken is crisp.
