Roasted Onion Guacamole

This time instead of making your guacamole with fresh white onion try this recipe which calls for you to roast the onion and then add. It is a completely different taste.

  • 1 lg. red onion
  • 2 garlic cloves
  • 2 Tbs. balsamic vinegar
  • 1 Tbs. olive oil
  • 4 small ripe avocados, peeled
  • 1 Tbs. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. dried Italian seasoning

Chop onion and garlic. Combine first 4 ingredients and place in a foil-lined baking dish. Bake at 425 degrees for 25 to 30 minutes or until lightly browned, stirring once. Cool. Mash avocados in a medium bowl. Stir in the onion mixture, lemon juice, salt and Italian seasoning. Chill at least 1 hour.

Makes about 2 cups.
