Roasted Pepper and Mozzarella Panini
Serving Size / Yield
- 4 oz. mozzarella cheese, cut into 8 slices
- 4 slices bread
- 4 basil leaves
- 1/4 C. roasted red bell peppers, cut into strips
Trim the cheese slices to fit the bread. Lay half the cheese in a single layer on two slices of bread. Put the basil leaves and peppers on top of the cheese. Then top with the rest of the mozzarella. Place the remaining bread on top and press down with your hands.
Preheat a stove-top grill pan. Put the sandwiches on the pan. Place a frying pan on the sandwiches. Cook for 4-5 minutes. Turn the sandwiches when they have been browned on one side. The cover with the weight and toast the other side. Serve hot.
