  • 1 3lb pork tenderloin
  • 6-8 slices of bacon
  • 1 zucchini, sliced into flat lasagna noodles
  • olive oil
  • salt and pepper
  • minced garlic
  • 1/4 C. brown sugar
  • 1/4 C. cola
  • Sriracha aioli
  • 1 C. mayo
  • 2 T. Sriracha
  • 1 lime, juiced.

Preheat toaster oven to 350ยบ.

In a small bowl combine brown sugar with cola and stir until well combined. Dip each slice of bacon into glaze set aside. On a cutting board cut tenderloin into 2-3 inch medallions. Season medallions with salt and pepper and minced garlic to taste. Then wrap one slice of bacon around each medallion, using a toothpick to secure piece together. Lightly coat zucchini with olive oil in a bowl, then place zucchini onto baking sheet. Then place each medallion on top of zucchini and put into the toaster oven. Let medallions cook for 30-40 minutes or until bacon and pork is fully cooked and zucchini is tender. Take out and let cool.

In a small bowl combine aioli ingredients together until fully mixed. Serve pork medallions and zucchini with aioli warm.
