  • 1/2 lb. red potatoes, halved
  • 6 shallots, halved
  • 1 Tbs. oil
  • 1/2 tsp. rosemary
  • salt
  • 1 Tbs. soy sauce
  • 1 Tbs. honey
  • 1 Tbs. Dijon mustard
  • 4 bone-in, skin-on chicken pieces

Preheat grill to medium heat. Line the bottom and sides of a baking pan with aluminum foil and toss potatoes and shallots with oil, 1/2 tsp. salt, and rosemary. Grill the potatoes and shallots in the pan for 15 minutes. While potatoes are grilling, mix the honey, mustard, and soy sauce in a bowl. Brush the chicken with the soy sauce mixture and briefly grill the chicken for 5 minutes to sear the outside. Add chicken to potato pan, and continue grilling the casserole for 15-20 minutes or until chicken is cooked through.
