Roasted Red Pepper and Tuna Sandwich

I never know what to do with roasted red peppers! This recipe is a life-saver!

Ingredients

  • 1 sm. roasted red pepper, drained and cut into thin strips
  • olive oil
  • salt
  • 1 3.5-oz. can tuna packed in olive oil
  • 2 Tbs. mayonnaise
  • 1 tsp. lemon juice
  • 1 Tbs. chopped green onion
  • 1 Tbs. fennel pollen
  • 4 slices white bread

Directions

Toss roasted pepper with oil and salt. Drain tuna and put it in a bowl. Mash it with a fork. Blend in the mayonnaise, lemon juice and green onion. Spread the tuna on two bread slices. Top with the pepper strips. Cover with the rest of the bread, pressing down. With a large knife, trim off the crusts. Cut the sandwiches in half diagonally to form two triangles. Serve.
