  • 4 red bell peppers
  • 1 tbsp olive oil
  • 1/2 C red tomatoes, chopped
  • 3 tbsp chopped fresh basil
  • 1 tbsp balsamic vinegar
  • 2 garlic cloves, minced
  • 1/2 tsp sea salt
  • 1/2 tsp fresh rosemary, finely chopped
  • 1/4 tsp ground red pepper

Begin by baking peppers on a foiled-lined baking sheet at 475 degrees for 12-15 minutes until the peppers look blistery.  Then take the peppers and place them in a ziplock plastic bag and seal.  Let the peppers stand for about 10 minutes.  Then peel the peppers and remove seeds.  Chop the peppers and drizzle with 1 tbsp of olive oil. 

Now that the pepper are out of the way you can begin on the dried tomatoes.  Pour boiling water to cover dried tomatoes.  Let stand for 3-5 minutes.  Then drain (dab with paper towel if oil still remains) and chop.  

Last but not least, stir peppers, tomato, basil, and remaining ingredients together. Cover and chill in refrigerator.
