  • 2 large seedless red tomatoes, sliced
  • 2 large seedless yellow tomatoes, sliced
  • 1 onion, sliced
  • 1/8 tsp. sea salt
  • 1/4 tbsp. olive oil
  • 1/2 garlic glove, minced

In a large skillet add your olive oil and set on a low simmer.  Then add your sliced tomatoes, onion, garlic, and salt.  Gently simmer your vegetables and spices for about 15 until everything is roasted and tender.
