  • 3 pints cherry tomatoes
  • 1 T. olive oil
  • Salt and pepper to taste
  • 4 cloves garlic
  • 1 (8 oz.) package cream cheese
  • ½ C. shredded Parmesan cheese
  • 1 loaf sourdough bread, sliced
  • Fresh parsley for garnish

Preheat oven to 325 degrees. In a bowl, toss tomatoes with oil, salt, and pepper. Spread out onto a line baking pan and roast for 45 minutes. In a small skillet, heat remaining oil and sauté garlic until fragrant; transfer to a small bowl. Add softened cream cheese and Parmesan; mix well. Toast your bread slices under a broiler for a few minutes. Assemble snacks by spreading garlic cream cheese onto bread and topping with tomatoes. Garnish with fresh parsley.
