Ingredients

  • 5 medium yellow bell peppers, top removed and gutted
  • 2 cups cooked turkey, finely chopped
  • 1 medium yellow onion, chopped
  • 1 cup dressing leftovers
  • 1/4 tsp black pepper
  • 4 tbsp. Parmesan, shredded
  • Rosemary for garnish

Directions

Preheat oven to 400F.
Take one of the bell peppers and dice it up. Set aside this one for later.
In a medium sized square baking dish, add ½ inch of water to the bottom and then add the 4 bell peppers. Place this in the oven to bake while you are preparing the turkey/rice mix.
Place the cold turkey and stuffing in a mixing bowl and begin to mix and mash until blended together. Then, place the mixture inside the peppers that are in the baking dish.
Top each pepper with 1 tbsp. of cheese and garnish with a bit of rosemary. Bake for 25-30 minutes or until the cheesy tops turn golden brown.
