Mixing vegetables with yogurt and your favorite spices is such a fun and healthy way to eat them!

  • cooking spray
  • 3 med. zucchini, cut in half lengthwise and then sliced into 1-inch pieces
  • 2 Tbs. plain nonfat yogurt
  • 3/4 tsp. minced fresh thyme or 1/8 tsp. crushed dried
  • 1 clove garlic, minced

Preheat the oven to 450 F. Lightly coat a shallow nonstick baking pan with cooking spray.

Arrange zucchini pieces in a single layer and lightly coat them with cooking spray. Roast until crisp-tender, about 5-6 minutes.

Meanwhile, combine yogurt, thyme and garlic. Toss the roasted zucchini with the yogurt mixture and serve.
