  • 2 T. vegetable oil
  • 2 onions, diced
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 ½ lb. ground beef
  • Salt and pepper to taste
  • 3 T. chili powder
  • 1 T. cumin
  • 1 (28 oz.) can diced tomatoes, with juice
  • 1 (14 oz.) can tomato sauce
  • 2 (15 oz.) cans kidney beans, drained
  • 1 ½ C. spaghetti pasta, cooked and drained

In a large skillet, heat oil and sauté onion and red bell pepper until softened. Add in garlic and season sautéed mixture with chili powder and cumin. Stir and cook for an additional minute until fragrant. Brown beef along with onion blend, seasoning with salt and pepper. Once the beef has been cooked through and no pink remains, transfer all contents into your crockpot. Stir in diced tomatoes with juice, tomato sauce, and kidney beans. Cook on high for 6 hours as the chili thickens. Add your spaghetti into the chili during the final hour of cooking or serve chili over spaghetti noodles.
