  • 3 C. pasta, cooked and drained
  • 1 lb. ground beef
  • 1 green bell pepper, chopped
  • 1 package chili seasoning mix
  • 1 can diced tomatoes, drained
  • 1 can enchilada sauce
  • 1 ½ C. water
  • 1 can chili beans
  • 2 C. Mexican blend cheese, shredded

Preheat oven to 350 degrees. In a large skillet, brown beef with green bell pepper until beef is no longer pink. Add in seasoning packet, diced tomatoes, enchilada sauce, water, and beans. Simmer for 10 minutes, pour over pasta in a greased baking dish, top with cheese, and bake for 20 minutes covered, and 10 minutes uncovered.
