  • 2 T. olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 carrot, peeled and diced
  • 2 tsp. dried oregano
  • 1 tsp. dried basil
  • Salt and pepper to taste
  • 1 (28 oz.) can diced tomatoes
  • 1 (14 oz.) can crushed tomatoes
  • 6 C. chicken broth
  • 1 (15 oz.) can kidney beans
  • 1 C. pasta

In a large pot, heat oil and sauté onion and garlic until translucent. Add in celery and carrot; cook until softened. Season with oregano, basil, salt and pepper. Pour in diced tomatoes, crushed tomatoes, and chicken broth; bring to a boil, reduce heat, and simmer for 10 minutes. Add in beans and pasta and continue to simmer for 10 more minutes until everything is tender.
